An innovative recipe for a traditional process

 

As a result of a collaboration between winemakers, cellar masters and distillers COBALTE is being crafted in the best and most authentic way.

From the harvest to the wine press to the pot-still alembic.

Every year, after several months of patient work by the wine-growers, everything begins in the fall for COBALTE when grapes are harvested by hand when they reach perfect ripeness. Pressing follows, in whole bunches, very smoothly and progressively with a low extraction yield, and with final splitting of the juices.

Then, the winemaker plays a key role in the selection of vintages and grape varieties.

The selected grape juices are then fermented and distilled in a traditional pot still.

Final distillate is ultimately reduced with spring water.

Eventually, the master distiller will have finalized a slow and authentic manufacturing process in order to create the personality and the signature of a unique French vodka.
